The Pate
Our Pate, like everything else in the store, is made with no preservatives. They are a product of an emulsification of fats and livers, to create an incredibly smooth, creamy texture. Dave and Warren have been developing spice blends over the past three years to come up with a blend for each specific liver. We currently offer on a rotational basis:
Chicken pate, with red chili, black pepper, allspice, and thyme
Cinnamon and Nutmeg Duck Pate
Smoked Guinea Fowl Pate
Peppered Rabbit Pate
The HeadCheese
Our headcheese is not what you'd traditionally find in a store. We created more of a rillette style headcheese, which is more dense and rich, and less jelly like. For our garnish, we are using fermented dills from The Pickle Patch Farms.
