Maple Vinegar

Alternatively, we have taken to calling this "The Balsamic of Canada". From Cabane du Pic Bois, in Brigham (Eastern Townships of Quebec), this is a sweet and sour vinegar that lends itself to anything you can imagine.

We have made mustard, drizzled it on Pascale’s Ice Cream, made vinaigrettes, heightened sauces, and used it in our brines.
