Halls Apple Orchards
We first met Chris Hall back in 2007. In the fall, at Sweetgrass Aboriginal Bistro, we were working closely with Domus Café, The Black Cat Bistro (when it was still on Murray Street), and Bistro 115 (before it closed), to create a progressive fall dinner focused entirely on apples.
That’s when we started to talk to Chris about apple wood chips for our smoker. We figured, if we have a local orchard, we should be able to get local wood chips to smoke our bacons. Finally in the early summer of 2009 it all came together, and we now use exclusively local apple wood chips in our smoker, from Hall’s Orchards. But that’s obviously not all they do. The Piggy Market also operates as the dropoff point for Hall’s online sales system.
